Dark brown spice cake, raisins, weird neon jellied fruit, maraschino cherries. My father the registered nurse made fruitcake and infused it with bourbon but not by wrapping it in soaking towels. He used a spinal needle, wrapped them in brown paper and set them aside until Christmas. You really only need one slice a year.
Every once in a great while I will taste a fruitcake I like. The thing I can't get past is the jellied fruit.
ReplyDeleteThis sounds like a NZ Christmas cake, but other than the cherries, I can't picture the jellied fruit, other than the cherries. (I cheat and buy mine.) We also traditionally used them for wedding cakes. (It's a British thing.)

ReplyDeleteI have never liked fruitcake (or British Christmas or wedding cakes) but then I have not had one in decades. I should give it another try. (and IB -- the candied fruits are the best part).
